Because romanization for katakana ヴァ would be "va", not "wa". In katakana "wa" is ワ. So, romanization for ヴァルプルギス is "Valpurgis". And no, I don't know why they don't write it as ワールプルギス so it can be romanized as "Walpurgis". Japanese can be pretty retarded with foreign words.

Most native speakers won't even be able to differentiate the slight subtlety between Walpurgis and Valpurgis.
I mean, I've only taken a year of German and can make the individual sounds of 'v' and 'w', but the difference is literally just where one's teeth land on the bottom lip. 'v' lands about a millimeter away from where 'w' lands.
