I think Setsuna F. Seiei is better.
A big thing a lot of protagonists go through is how they mature through the conflict. That being a child soldier is a key part in helping them become good adults. Setsuna's experience as a child soldier didn't make him more mature, it damaged him. He gives up believing in God but worships the ideals he associates with his savior the 0 Gundam, that peace can be achieved through armed force. He is still a child soldier for Celestial Being, same shit different organization.
But in the second season, Setsuna begins to heal. It's not the conflict that's making him mature, it's the idea of peace achieved through non-violence. While he still kills Ribbons, the man who made him Setsuna F. Seiei, he is still changed from who he was before. He's not going to strongarm the world into being peaceful, but is going to do stuff behind the scenes to make sure it remains peaceful. And in the movie, he manages to save the Earth not through the destructive power of the 00q, but through it's ability to communicate with others. His ideals have changed, and because of them mankind is able to advance to it's next stage by spreading out among the stars.

You seem to have missed a major plot point in 00. CB wasn't supposed to succeed in "peace can be achieved through armed force", they had an ulterior motive. Humans are really good at working together in the face of a common enemy, but when there's no common enemy people divide and struggle amongst themselves. The true purpose of Celestial Being was to make themselves the common enemy of everyone on earth in order to subtly prompt everyone on earth into unifying. The idea of "peace through superior firepower" is even openly discredited in S1.
If everything had gone according to play, the Gundam team would have been wiped out at the end of S1 by a unified humanity. But Ribbons hijacked the plan by manipulating Alejandro so his little secret cult would have dominion over the entire unified world. That's the "distortion" Setsuna kept talking about in S2.
They always knew that destructive power could not *directly* bring peace, but that peace could be achieved by humanity's *reaction* to destructive power. Also the movie was balls.

Also I personally don't believe that CB was supposed to be completely destroyed after season 1. I interpretted it as Veda would still work with CB remains to work with a united humanity after S1 to bring about innovators in the human species.
It's a tough call between Chirico and Amuro, but I think I'm going to have to go with the White Devil over the Abnormal Survivor. One of the things Amuro benefited from that few other mecha protagonists have is a long in universe story. We see him develop in 0079 from a whiny little bitch into a young man and a soldier. In 0087 we see him haunted by PTSD and finding the motivation to fight again. Finally in 0093, Amuro is a cool, hardened, professional soldier.

I can't relate to any of these guys. I'm not a super soldier, cop, abnormal survivor martial artist, negotiator, or have special psychic powers. if anything all of these characters just feel like marty stus of their own respective universes and the plot reminds you constantly that they are the hero so they will never die.
Is there ANY mecha anime where the protagonist is just a regular guy with no special talents whatsoever whose only goal is getting through the day without dying?

I love how in 0079, Amuro comes off a messed up kid and not an edgelord like many modern protagonists. He's antisocial, paranoid, and has some interesting character tics. At the same time he's still a fairly normal and has to grow up while in the middle of a war.
