Aircraft still needs a pilot and the guy manning the firearms. I don't see that being an issue when everyone is focused on their tasks.

I personally like it. It's a cool concept but pretty uncommon and not used so much, unfortunately. I like to write short military mecha stories, and I generally prefer to write about mechas with multiple pilots. crew size depending of the type of mecha. I think that having two or more characters chatting and shouting with each other in the cockpit helps to situate the reader in the action, build tension, and also helps to establish the personality of the characters.
Loved that Origins & Thunderbolt made the Guntanks have a crew to pilot
It's pretty surprising how rare it is in fiction considering how commonplace it is in reality. Aerospace, naval, and land based armor deployments all have units designed around crews of people.
