The arc after the Desert one, is when things start to pick up. Once they hit Dublin, I think is when ZZ gets really good.

However there's more comedy once they're in space.

Why didn't they make compilation movies for ZZ like they did MSG and Zeta?

The rest of that final arc is on-par with or better than the majority of Zeta.

It's an okay comedy series at the start, nothing awful - the only reason it's disliked is because it's such a schizophorenic continuation of Zeta. Then once they arrive back on Earth and get to the desert it begins to become more of your typical Tomino Gundam, which it is all right at, especially when the Dublin Arc comes which is amazing. Then when they go back to space they try combining the early comedy feel with the middle Tomino angst feel and fail miserably.

The final ten episodes of ZZ are such clusterfucks

I actually liked the last arc of ZZ; it's a clusterfuck but that's because its literally Punished Glemy and his loli army taking over Axis and fucking up everything for Haman's Neo Zeon uprising.
The last two episodes in particular struck a good balance of feeling like Zeta but with only an adequate amount of suffering involved.
Sayla's conversation with Bright about Char's whereabouts was enough for me to forgive CCA's out-of-nowhere Neo Neo Zeon uprising headed by the man himself

Amuro and Bright were forming Londo Bell to basically do the Titans' job and Char stays in the shadows apparently stewing like Sayla described in late ZZ until the very beginning of CCA.

0083 gets mixed reception, but it's only 12-episodes and it's a mid-80s OVA so it's pretty
08th MS Team similarly, only it's late-90s so not quite as pretty, but it does offer a different take on the OYW which is nice to see
F91 is rushed, but not actually bad, and being a single film it's only a short watch

There's other UC stuff, but those are self-contained stories on their own. Whether you'll like them depends on your own preferences, as they're somewhat varied. The OVAs most notably lack newtypes and psychic shenanigans.

There's Gundam F91 which is a movie set 30 years after CCA, about an armed movement that tries to set up an aristocratic nation in space by taking over a couple of colonies. Worth watching if you have two hours to kill, it's good animation but the writing is poorly paced and the flow of the story suffers as a result.

Victory Gundam is a TV series set 60 years after CCA about the conflict between another colonial uprising and the Federation. The Federation can't do very much so they rely on the League Militaire, a group of volunteer fighters that are vaguely akin to the old AEUG. I'd say it's worth watching for the nice combat choreagraphy and unintentionally hilariously weird writing at points.

0080 OVA is about a Zeon spec-ops team searching for a nearly finished prototype Gundam near the end of the OYW. It's been said a lot that this tells a better tragedy story than any of the other Gundam stories.

Stardust 0083 is a 13 episode OVA set in between the original series and Zeta Gundam, about the Federation trying to deal with remnant Zeons carrying out revenge operations. Worth watching for some of the best hand drawn animation in the whole franchise and the mecha designs. Story gets kinda iffy at the end due to drama and conspiracy. There's a compilation movie version that should be avoided since the pacing is awful.

08th MS Team OVA is about combat on Earth during the OYW. Main character commands an MS team in desert, forest, jungle, mountain, urban, etc environments. They discover a new Zeon weapon and are tasked with taking it down.

I genuinely like watching it overall more than Zeta because the annoying parts of ZZ annoy me way less than the annoying parts of Zeta. However I feel like the high points of Zeta are better than the high points of ZZ. I'm not entirely trusting of people who completely bash it or completely praise it as to whether they actually watched it. Also I begrudge people who actively tell others and newcomers to skip it wholesale or to skip certain episodes rather than letting them watch it and make up their own minds - if people are into Gundam and want to watch more Gundam they owe it to themselves to at least give it a fair shot. I avoided AGE for the longest time because of people telling me it's shit but when I finally watched there were definitely aspects and parts I enjoyed from it (though I still think it isn't all that good).

They are well animated but the choreography for most of them is awful and they aren't fun to watch. A majority of fights are so hard to follow or don't have anything going for them. 0079 had genuinely entertaining battles even with the bad animation.
