Origin's canon in the sense that it's animated, thus it overrules any previous interpretation of the pre-OYW put forth before it. Even if Sunrise officially wanted it to be separate from the original timeline (which they've never implied, and the OVA staff have hinted the exact opposite,) the Origin OVA is going to be the official official portrayal of the years and months before First Gundam in the eyes of the fanbase at large. The manga is straight up Alt-UC, though.

Thunderbolt's kind of in a weird place where it's designs are Endless Waltzified but everything else has remained more or less the same, lore-wise. It's really no less canon than, say, 08th MS Team, but it's portrayal of Mobile Suit designs is an extreme artistic liberty
which is acceptable in fiction and in the eyes of Sunrise. Hasn't stopped them before,
why would it now?

Everything else is supplementary material and can be watched at your own leisure, including the last two. The first four, however, are the very foundation of UC Gundam, and as such can not be skipped and therefore must be considered canon. Victory may be considered supplementary material as well, but the original Gundam series is required to watch it, though not the OVA spin-offs.
I don't give a fuck what Tomino says or moonlight butterfly or whatever, characters regularly talk about the Universal Century like it was a dark age that only just officially ended. Minovsky interference is a large part of warfare (and daily life), and Bellri is suggested to be a Newtype (though the word is not used, and it's not a well-known phenomenon despite humanity having settled on Luna, Venus, and Jupiter).
