Combat shifting towards faster, more maneuverable less static although Unicorn Earth bound battles play out really static and unmoving. Anyway you could get the same punch in a handheld beam weapon, the G-Cannon from F91 is pretty close to an updated Guncannon

I wonder why they never tried to develop tech to let missiles follow trails of Minovsky Particles back to their source. Battleships would suddenly be sitting ducks.

Minovsky particles fuck up any kind of electronics that does not have bulky shielding. The implication being that any missile large enough to be able to have a guidance system based on, say, Minovsky particle density readings, would be too large to be practical (easy to shoot down)

They are, mostly as secondary weapons like wrist or waist mounted grenade launchers. Some like bazookas and panzerfausts are used because they can be given different charges for different affects or doing damage over a larger area to ships. I'm still not sure on the advantages of ballistic weapons over beams except in very specific situations.

Most ordnance is unguided though, and relative to beams are slow moving. Also they can still be shot down, granted its pilots of the upper echelon seen doing it like Amuro and Char.

It's unguided but it's still going to be faster than the average MS, so it's not as simple to avoid as I think you're making it. And while super aces like Amuro can shoot down some missiles you're really overestimating the ability of the average pilot.
