Trigger is somewhat limited in what they can do for the anniversary because they don't technically own Gurren Lagann. Though most of the current staff did work on it that was back when they were with Gainax so the studio itself doesn't own the rights, which means they can't make anything that is officially "Gurren Lagann" related.
Hence, they can only really do a few references without getting sued.

I haven't seen Dunbine, but how is Escaflowne even magical? Its only abilities are to transform into a dragon and swing a sword around. Its power source may be magical, but that's about as far as you can take that argument

I'd even go as far as to say that it's the main reason why the mecha are not all that pronounced in the setting.
Of course, the focus being Hitomi?, her romance and the overall quest to save the place, they don't need to be.
But even a simple hype-powered engine (this short, TTGL, Braves, Getter,...) does a great deal to make the robots more interesting.
Escaflowne simply uses them as armored suits/knights if we're to be genre-correct. Didn't leave the writers much tools to have fun with the fights (aside from that one instance where he slaughters everyone and gets possessed).

Prehaps not Esca itself, but the dragonslayer mechs had plenty magical-esque qualities like levitation (in a setting where levitating rocks are a natural phenomenon and are utilized for transportation), invisibility cloaks, being made of a 'liquid metal', with great plasticity and very high degree of control over shape and movement, yet requiring constant energy source (they melt when they are destroyed, during the sniping sequence Dilandau's one completely liquifies due to overheating").
But yeah other than that, mechs in that setting seem deliciously analog.

It's half true. The ratings in S1 weren't so good and it was about to be cancelled. But the toys sold well so it got the second season.
And to be fair, the first Season does take a lot of time to take off, but the last chapters are magnificent.
On the contrary, IMO Escaflowne started great and then it kept losing momentum. The first half of Esca is one of the best anime in the 90s. It's a pity it became shit afterwards.
