Probably because he's neither nearly as great a pilot as people like to pretend and because they wouldn't actually like the pilot if Sunrise showed him. Stark Jegan's pilot is good, but he's not Ace McMaster-Pilot people make him out to be, and Marida was able to match his movements in a bulkier, heavier suit before taking him out using a trick she almost certainly didn't just happen to discover at that moment. If they actually made him the main character it'd probably be an 18 year old crying about getting revenge on his comrades when they pulled in to the cockpit, or even worse a full blown adult like Shiro who acted like a teenager for the sake of drama.

They already have a post-OYW story in Gundam Legacy

They split up, with Hepner and Roberto leave and join the Republic of Zeon, and in 0084, they join Kenneth Bederstadt in helping the Federation Forces hunt down their former comrades, Sophie and Renchef who are still resisting on Earth, while Romfellow, Agar, and Healy handle the remnants in space after deserting the Titans. The rest of the Midnight Fenrir is unaccounted for (possibly dead.)
