Because Ishikawa didn't want them to be. Straight demons is a little strange with the series since overall it's aimed to be science fiction rather than fantasy. I mean this in just how things are framed since villains are mutated lizards/cyborgs/aliens and Getter while being a whole Buddhist thing about being God/Universe it tries to do it in a somewhat scientific way of energy and what not rather than mysticism. I'm not saying its hard science or anything that would be absurd, just Ishikawa framed it in a way that everything can be explained in somewhat grounded terms.

Literally throughout all of G they show that they are internally mechanical and wherever a demon is cut open you see their mix of machine and human gore

Wrong it actually does fit the themes of Getter focusing on evolution and it's implications. Remember that the Hyakki empire are essentially evolved humans, trading humanity in order to obtain power and ability. This robs them of their soul though and makes them lose what makes humans special, the Getter team defeating them shows its not just the machine it's the man that matters too. It also brings the questions of if evolution is good or evil, especially since evolution is forced on whole cities that are turned into demons. You can further see that the question of if human evolution is good or not popping up since this WAS human evolution but went against the rules of nature.

I mean yeah, probably. Most great stories are just kinda shooting from the hip and through properly writing the earlier stuff and with a little luck you are able to fit in stuff later on in a really sensible way that feels less like retconning and more like logical explanations for what previously happened.

There's a decade long break between G and Go, so, yeah.

By the end of Go and Shin there seems to be an overall plan, but that clearly didn't exist initially and was retroactively applied to the earlier series through retcons and new chapters added to new collected versions of the original series.

I heard someone say that Kawagoe's Koutetsushin Jeeg is better than his Getter OVAs, because at least it offers an original story that's just not references after references.

Can't say I disagree, even though I still prefer Getter overall. I didn't like Jeeg initially, but after rewatch, I learnt to appreciate it. The anime has some heartfelt moments that Getter is actually missing on.

You mean Go's popularity. Ishikawa's editor requested he do more Getter stories explaining what happened between G and Go because of Go's popularity.

In fact, Go must have been a very popular manga. Getter had been done for about 15 years before Go was made. After Go, Ishikawa was pressed for more Getter stories which led to the creation of Shin and the newer original era stories. Additionally, Go spawned Getter Robo Armageddon which was the most expensive Getter production made, and eventually led to two more OVAs. Overall, two of the OVAs were based around Go (armageddon and svn).
