It's 80 meters in the movies, and supposed to 40 in the TV series, but the animation was incredibly inconsistent with the size, frequently changing episode-to-episode, and sometimes even between shots.

In the TV series, they've admitted they didn't care about consistent scale and changed it according to what looked most dramatic.
So sometimes they'd be up to 200m tall, which is as tall as Gunbuster, and towering over the cityscape.. Other times, they'd be a mere 40m tall so they could climb up the buildings.
80m-100m was roughly the average for most of the show, so they normalized it to 80 for the Rebuild movies.
