Not always, in fact a large amount of gundam's are surpassed technologically by many other suits by the end of their series.
UC gundam did this a few times, but one of the best examples is Gundam Age.

0079 is probably the only Gundam that was surpassed technologically by a lot of units by show's end. The Zeta, ZZ, V2, God, Turn-A, Freedom and 00 may have been surpassed by a single enemy unit, but weren't inferior to many enemy units. Most of the rest, like the Wing Zero, Double X etc were at worst equal to even their ultimate antagonist's suit, or possibly even better than all of them in a few cases, like the G-Self.

The AGE-FX in AGE was at worst the second best unit in the setting, while by the time they get any focus as older units the AGE-1 and AGE-2 have been upgraded to modern standards as the AGE-1 Glansa and AGE-2 Dark Hound. They are equal to most modern units at the least, and probably surpass them in some ways - like the AGE-1 Glansa just having outright superior armaments in it's cannons.

Not to mention the Ground Gundams, EZ-8, even the Alex in several regards is inferior to the Gelgoog Jaeger, a limited mass production suit.

No, it's not. The various transformable units on display during the show are the only ones that really outclass it. It's at least comparable to any other mass produced unit in the show. It's given the Super Gundam upgrade when it does start getting out done by those same transformable units, something that puts it back on an even keel with most of the units the Titans or Axis field. It is outclassed even then by a couple of units, but they're all prototype units for skilled aces.

And this is outright bullshit. If the Nu is worse than the Sazabi it's not by much, and Char's desire was for them to be equal suits. The Nu is also not worse than any ZZ era Neo-Zeon suits. It has less built in weaponry, and in some cases a less powerful reactor but that's about it. Even then, some of the units with more built in guns have less powerful reactors. And it's smaller, lighter and more maneuverable than all of them as well as having a stronger reactor, greater acceleration, greater reaction speed etc. than almost all of them. Even the ones that outdo it only do so in a couple of areas at best and are worse in a good few other ways.

And it's strengths make it comparable to almost every suit in the show even late in the run. It's smaller and lighter than most units, has greater maneuverability and versatility than even some of the late show prototype suits along with greater efficiency thanks to it's Minovsky Craft system.

What about them? The only mobile suit in the 08th MS team that is straight up better than either of them is a Gelgoog, and even that's barely in the show. A few other units, like the Gouf Flight Type are superior in some areas, but worse in other areas and most are just flat out worse.
