Were heat-hawks always able to withstand beam sabres?
I'd imagine the beam saber could just cut right through that . . .

Yeah. Every Zeon melee heat weapon (the Dom heat sword is an example) seems to be able to do that. Sound stupid unless you do an extremely anal discussion about heat, plasma etc. However it would have been detrimental to have robots with melee weapons that can't block.
Was Amuro ever hit directly by a heat-hawk? Or did his shield take the blow every time?
I've always reasoned that the material of heat weapons was highly resistant to thermal and kinetic energy, enough that it can contact a beam saber's i-field for a short time. However, I also imagine that prolonged contact for more than a couple of seconds would result in permanent damage to the heat weapon.

There was that one time someone shoved a heathawk right into the side torso of the Gundam. The cockpit got hot but the heathawk wasn't able to get through the first layer of armor before the Zaku got shot down.
Char's Deleted Affair went into a lil detail about this, showing how Haman's custom Rick Dom was able to hold out against multiple GMs using only a heat saber. However as the battle goes on, the saber gets more and more banged up and it's only a matter of time before it completely breaks.
