Why would you use a jesta frame as an ewac, they aint the most common of suits.
How does EWAC work exactly?

EWAC mobile suits usually have some sort of fuckhueg radar system placed high on the suit that allows them to reconnoiter the enemy and screen friendly formations. They might also perform electronic warfare functions such as jamming signals.
In real life EWAC means Early Warning and Control, it refers to specialized support aircraft outfitted with fuckhueg radar system. They can detect enemy aircraft at very long range before they make contact with friendly combat aircraft, thus, giving them an early warning on enemy aircraft position, speed, and bearing. They also direct and control said combat aircraft as a sort of command vehicle.
Why are there even EWAC suits in UC when Minovsky particles are a thing?

Minovsky particles aren't everywhere forever. They're usually only used as ECM right before and during operations.

I like the Imperial probe droid from Star Wars (aka the Arakyd Viper recon droid). They're cheap, unmanned, and can be in the field for a long time. The Empire was able to use these droids to great effect being able to scour the entire galaxy and find the new Rebel base on Hoth in less than 3 years.
