Because Mobile Suit Gundam is WW2 Pacific Theater in space, so designs that evoke WW2-era tech are thematically appropriate.

Mainly because nips are big fans of german gear from WW2, and panzerfausts are cute.

But it could also be argued that it make some sense, universewise. Panzerfausts are good anti tank weapons at short ranges. So, it could be useful in a battle where giant robots charge and clash against each other in dangerous close range melees.

They're economical RPGs that are fire and then dump as opposed to a bazooka or rocket launcher where once you empty it and don't have any more rounds or magazines, you either have to keep it on you, where it's dead weight, or dump it, and then spend resources to retrieve it after the battle, if possible.
