how does 40k mecha (imperial knight, Wraithnight and such) compare to japanese mecha (like gundam) ?

Tau are fairly comparable to Gundam and to smaller combat suits like the kind you'd find in Bubblegum Crisis or Winspector.

The Imperium is where it gets ridiculously over the top, because everything the Imperium does is larger than life. The Grey Knight Dreadknights are pretty similar to the power armor in All You Need is Kill/Edge of Tomorrow though.

You basically have half an hourish to respond with nukes. No defensive capability is shown above tacnuke resistance, but the capacity to teleport is. So probably a few days of work will end with enough bases scattered across space for them to be literally impossible to remove.

They're lead by 8 of the most badass mech piolts the Enclaves have to offer. And the leader of the 8 and the Enclaves themselves, Commander Farsight, is a grizzled and hot-blooded badass that uses his mech to wield a fuck-off huge sword that makes him almost immortal. Not really, power levels in modern fiction go something like this:

Standard << Advanced Sci-Fi < 40k < Sci-Fi Anime << 'Powerful' anime.

By its very nature, most of mecha anime easily rolls over anything 40k since their biggest and baddest are the Titans and those are basically grunts for most shows out there. In general, Japanese cartoons do not stroke their dicks over imaginary realism and as such, they tend to do much more fun and (power-level wise) stronger franchises.

I generally don't really give a damn about power levels since it really has no point. In general, it is a dumb idea.

I personally harbor a bit of a distate for 40k but more so because of its fanbase than the setting itself.

I think the model scales are a bit off.

For instance, they say a Stompa is twenty meters, which is mentioned in Apocalypse.

If a Knight is 8 meters, then two Knights together should never be taller than a Stompa.

Yet , it's pretty clear two Knights are far larger than a Stompa if we go by models.

Mechanicum novel, 9 meters tall.
Dawn of War 3 visibly upscales them a fuck-ton (14 m) to match the Wraithknights.
The model in inches matches the 9 meter profile and said profiles have also been used to scale the titans up until Warhound where the figures in the new books actually fit the tabletop miniature... at least for the Imperium.

Enough Dakka is a philosophical concept, by its very nature there is never "enough" Dakka because "enough Dakka" is a state of being to be striven towards. It's like Orkish Nirvana, you are to live your life in the pursuit of Dakka because it is good, but the idea that you may someday have too much of it is suggesting there is some upper limit on goodness in the universe. It's not like there can ever be too many guns firing at once, after all. Orks don't generally appreciate the concepts of subtlety or conservation; to them ammo is to be shot, not saved, and running out of it just gives you a good excuse to use your choppa.

You're looking at this the wrong way. Dakka is no more than a dumbed-down term for projectiles, per unit of time, in a military context. It's more commonly referred to as rounds per minute.

Thus, "Enough Dakka" is simply any quantity of bullets per second that satisfies our military goal. For a conventional, human army this is the destruction of our enemies in a timely fashion with minimal risk to ourselves. For the imperial guard, the low emphasis placed on the latter may significantly lower the quantity needed.

Orks are an interesting case. While they do, very certainly, battle, they do so for the sake of itself rather than any concrete goal. Thus, sufficiently many bullets per second would prolong the fight as long as possible, while still ensuring victory in order to fight more in the future. This may be why orks have thus far failed to identify the sufficient quantity- not only does it vary situationally, but requires a moderate and balanced amount.

This has an obvious implication- orks haven't failed to get enough Dakka, they've been stuck with too much Dakka since the beginning.

Set it around Titan Company made out of several houses of Imperial Knights, smaller more humanoid imperial titans that house a single pilot, all the pilots come from several worlds across a few systems where the factories are and have a hard chivalry knightly order boner, with the suits being inherited in each house across the generations.

We follow a young by blow who was "adopted" by the main house when their parents died, and gets a chance to pilot an Imperial Knight when a load of pilots get killed in a chaos attack on the world they were currently holding a parade on. They acquit themselves fairly well in battle and get bumped up to knight status, though are placed under a old fashioned Knight Comander who is very "muh family peasants out".

Our pilot while technically a peasent was adopted by the house. They can have one hyper religious squad mate to introduce new watchers to the idea of the God Emperor of Mankind, one who is super into the whole imperial bureaucracy positional jockeying to introduce that and the last one who is set to inherit a family title.
Depending on budget it may be sensible to involve more or less characters, we dont want to blow our fightmoney to quickly and end up in an IBO situation where you are forced to animate in MSPaint, but that said it would probably be CG.

Actually some episodes where the Titans are fucked and they have to fight on foot alongside a guard regimant and see what its like on the ground instead of a magic walking fightcastle would probably be a series highlight and save mechfight money, so lets do that.

At first its fighting off the chaos invasion, then they are deployed officially to help capture a webway node for the Adaptus Mechanicus to do science at, then to blunt a splinter of a tyranid hive fleet and fight the wierd biotechnical stuff.

Leman russes are not a tractor chassis. What you're thinking about is the Land Crawler, which like the Land Raider was discovered by the Archmagos Arkham Land. That has a modified tank form, used during the 500 year Krieger Civil War.
