I'm pretty sure that they do in the new canon actually, and that all the ones there with non-red lightsabers are from the Legends canon. That, or pictures of Anakin in the immediate aftermath of becoming a Sith and before he had the time to craft a new saber.

So what? That was as much as Katoki was willing to do for a novel series apparently. Him being willing to design one but hide the rest doesn't make it any more likely he had something against Sumizawa or his writing than against Sunrise's decisions.
