Depends on how much money you want to spend.
If you don't care, get the recent Metal Build Gundam F91.
Otherwise the NX Edge figures are nice, and you can't go wrong with gunpls.

Ive got a little bit of experience, but not much. Im looking at the perfect series 00-raiser. Its by far one of my favorite, however, it does look challenging (sorry for late response, was looking up info about previous gundam, and forgot to check)

If I were you I'd go for a simpler High Grade before tackling a Perfect Grade, simply because PGs are stupendously expensive, take quite a while, and if you fuck up you'll be regretting it hard.
Screwing up on a HG is cheaper, and you get more experience for that PG later.

Robot Damaishii has a lot of high quality figures if you don't want a model.
