The mosaic is there as some kind of joke. It's there as a way to tell viewers; "we're not supposed to show you this, but we're doing it anyway for shits and gigs". Nobody is going to sue Sunrise for including a pop culture reference in their show, especially considering it's the studio that animates most Gundam series.

In this specific case, it was the manga that changed. They censored the "Gunsams" faces even in the manga, but in that new chapter both the Gundam and Zaku images were shown with no censorship.

The anime just adapted both without changes (well, actually, the Gunsams had different darker colors in the manga, and the anime changed them to bright RX-78 colors).
