Depends on the type of mech.
Helmets. I like when data shows up on the visors and when the pilots take off the helmets mid-battle when they feel like they need a breath of fresh air.
It also allows them to go out into space when needed.

For Super , or magical robot it's not necessary, for me, at last, but when a robot would be more "real" pilots need an helmet and a good protective suit. Still today, I think Gundam Wing had some of the best pilot suits ever.

It's not unthinkable to compress the hair into a plug (there's only 1 atm to sustain, that's no actually much). The real question is wether the hair would die or burn in open-space.
Just so you know : Space isn't cold, it's nothing and being thermal insulator hair are more likely to burn with direct sun exposure...

Helmets are a definite must if it's anything other than magical or classic super robot.
You get dramatic helmet removals and face reveals, you get the crazy combat damage visor cracking, the visual effects of huds on the visor; plenty of ways they can add to the look, and also get plenty of safety features.
Open faced versions for ground types is acceptable, but sometimes I think maybe they should still be complete, the force feedback in mecha is almost as bad as bridge controls.

pilots need a helmet. if they don't have a helmet, then they can't tear it off for dramatic effect.

Realistically you obviously need a helmet. But when I'm watching anime I like to see the characters' face (and maybe hair too), so I'm willing to accept some bullshit excuses they give me to avoid having helmets. A little bit of suspension of disbelief for the sake of style should be fine in most cases, although this should match the tone of the show. If they're going for something super serious and gritty, then by all means have some helmets.
Mazinger Z taught me that no helmet may sound heroic and all, but your tune will change when you slam your head into the control panel from the jolt of an enemy attack.

Yes, helmets add safety and given the cost of pilot training and mecha it worth the protection.
Also it offers a cost effective second layer for environmental systems, which can reduce other design complexities.

Man it ain't about shrugging off a direct weapon strike. Then you're fucked. It's about the jostling rapidly moving cockpit of a mech. Even if you're completely submersed in a fluid to disperse impact, your head is still gonna thump against something, or snap your neck.
The Mech will have the shock-absorbing suit included, who the fuck need to move in a encumbering suit when you can do with the minimal.
Women of the Space Future won't wear spacesuit as garment, only fiction have that. They will however wear a very tight catsuit that allow them to get into specialized equipment, if needed

It's not about practicality, just about adapting to your tech level.
When the mech and weapon you fight with are your only real way to survive (no casual escaping your gundam) then you might as well get comfy to pilot it well
pilot today need big suit because it's easier than upgrading the plane, also it help ejecting. But what if you can't escape and survive alone?

No, that's true--the one in the lime-green suit (not the Maintenance Division's Orange, but something related?) though she's more a case of being way too stocky to double as a swimsuit model, but not out-of-shape to serve on a warship.
Additionally there's a number of flat-chested or just particularly thin characters. I should've said 'Every named woman aboard the Yamato' and it would've been truer.
For any male character in a flight suit (which mirror the women's everyday uniform), it's noticeable too.

The Gamarillians have something similar too--aside from service tunics and pilot suits (Ditz has both), some wear a formfitting daily uniform of some kind, like the 2-meter-tall slab of blue muscle that is Lt. General Eric Domel. Surprising it's not until the second (non-recap) film where a Gamarillian woman wears one, Colonel Neredia Rikke, who wears the same bodysuit but combine with a cape (a common item with the service/dress tunic). Maybe only senior officers wear them.
