In the case of Getter, having 3 different forms and being able to break down into the component jets brings tons of utility. Also it looks cool.

Pic related is another example of a cool transforming mech.
But in all seriousness, it's mostly to fill multiple roles into 1 machine, like with VFs Switching between Speed/maneuverability/defense.

Having one form with all thrusters pointing in one direction for max accel, and another with them pointing in different directions for better maneuverability is a decent reason for transformation.
