I wouldn't worry too much about essentials, I guess the thing to do would be Mobile Suit Gundam, Gunbuster, try a Getter OVA or the manga, and something Mazinger for good measure.

One man's essential mecha anime is another man's shit mecha anime. Your only sensible option is to make a list of all mecha anime you come across on wikipedia, ann, animesuki, insert forum x, y z etc.... then download and/or stream the shows.

Just pick what sounds interesting

Some of the best mecha shows I've watched have been extremely obscure and have had no influence on anything. Gakusaver, for example.

And on the other hand, there's a lot of popular, influential stuff that I don't like. Most of the Macross series that isn't 7, for example.
