That they wouldn't encounter ultra-low altitude fighters with extremely specific cable equiptment with little to no use on an airborn vehicle beyond tripping walkers like that.
And that even if they did encounter them, they should be able to shoot them down.
And that, worse comes to worst, if they did get their legs wrapped in wires, their walkers' operators would just stand still instead of destroying their walker trying to break free of the cable.

That said, they managed Endor's quite rugged terrain just fine and in fact came away from the Battle of Endor undestroyed by Ewoks which is more than the Death Star II can say.

Why does nobody ever seem to draw the fighting machine properly? Wells' descriptions are actually quite detailed so there's really no excuse. All appendages should flow in an organic manner with finely segmented armour and no exposed hinges or rotating joints. People tend to forget that the height, large armored feet and body does somewhat help prevent them anti-tank mines that were so effective in the clone wars from taking out the armored transport like they were bugs.
Of course, if you have something that can penetrate that armor like photon torpedoes that counts for nuts, but it's the thought that counts.

Having the height advantage also means you can fire over the horizon sooner too. And if I'm not wrong the ATATs are meant to carry troops with speeder bikes for rapid deployment.

Also other variants in the EU includes ones with shields, which are a whole new terror class of its own.

Just to add on to the backstory, before that, same guy was on the design staff of the Death Star, and when he pointed out the critical design flaw in the heat venting system, and as a result Tarkin reassigned him to the Imperial Personnel Transport Design Team where he was expected to create a taxi or something in hopes that he would disappear. He designed the Imperial Speeder Bike instead. This lead to his reassignment to Veers.

FUN FACT:
The first person to wield a "laser sword" in science fiction was actually Bob "Gilligan" Denver. It was on an episode of Far Out Space Nuts where Bob's character accidentally waved around a laser cutter (you couldn't see the beam, though) and started swinging it like a sword. It has been suggested that his orange coveralls are even the reason for the rebellion's flight suits.

Legend has it that George Lucas once walked accidentally walked in on the cast of the show taking a lunch break while still in costume/make-up and the sight of a group of random aliens sitting and eating lunch together is supposedly the inspiration for the Mos Eisley Cantina scene.
