It made sense in Edge of Tomorrow, since it was frequently shown that against mimic weapons armor basically did jack shit, so a very low armored approach makes perfect sense in those situations. Any piece of metal not necessary to the jacket saves $$$, and a face plate wouldn't have saved any lives.
In the Matrix, however, there was really no excuse. We see tons of people get ripped to shreds by robot tentacles specifically because they had no protection at all. And based on the 'cutting into the ship' scene from the first movie, while armored cockpits wouldn't have been invulnerable they very easily could have bought time, sometimes crucial seconds.

Star Wars gets away with it because the ships have strong silhouettes and color palettes. Even then, the greebling tends to be rather conservative or justified by the sheer size of the object in question. Trying to build panels large enough to give a big Star Destroyer a smooth hull would be extremely difficult for engineers. To that end, it's pretty much the same mount of proportional detail as real life warships.
But with other IPs you get something comparable in size to a truck and it has so many panels lines it looks like it has leprosy.
