So say you are just getting into Gundam and want to watch basically the core UC stuff for comprehensive reasons. Is the preferred viewing order chronological, or by release date? Should you watch stuff like 008th MS Team and Stardust, or just stick with things like MSG, Z Gundam, ZZ Gundam, Gundam Unicorn, etc? Which is the most necessary stuff, and which is fluffy stuff?

Weird to see it called that instead of New Mobile Report. That said, start with chronological order, try everything, stop watching anything you don't like. Watching for completions sake is silly, and none of it is necessary. If you don't like it, don't watch it.

I'd say chronological. Some people argue you'd be spoiled on a few things, but I genuinely don't think they're spoilers unless you know what you're looking for. Very specifically Stardust Memory helps clear up some confusion the beginning of Zeta might cause.
Stuff like 08th MS Team and War in the Pocket don't have much overall UC plot relevance and are mostly isolated stories.
Watching it both ways works, there's no "wrong" way to go about it though.
