I've read some volumes of a manga that covered the OG show, but I wanna start somewhere with the shows. I've heard IBO is fresh but is there a better starting point?

Gundam Seed if you want to watch a modern version of the original Gundam.

Gundam 00 if you want to watch the best most recent Gundam.

Gundam 0079 movies if you want to understand the basic Gundam story and themes.

G no Reconguista if you want to dive into the deep end first.

UC is the main timeline and most extensive. Going in production order is the simplest way to dive in. Chronological order makes logical sense, but they are all built on the fact that you've probably watched the older entries so you may have some spoilers and it is sort of impossible since Origin is the earliest in the UC timeline and we're still waiting on that series to finish.

If you want to fast-track your way through UC, the best way to do it is 0079 movies, Zeta (TV ver), CCA, 0096. You can watch the late UC stuff (F91 and Victory) at your own leisure since they're practically alternate universes in of themselves.

It is possible to start with the AU shows, too. Wing, X, 00, AGE, SEED, IBO, G, RiG all lie outside of the main UC timeline and can be watched independently of each other in any order you want. There's also Turn-A which is a unification of certain timelines, but you may want to save that for later...or not. It's not that important.

No, just to give an understanding of what the conflicts of early UC were about and how they relate to each other without spending an extra 40 hours that you may not enjoy or just dropping the series entirely out of boredom. Besides nothing is stopping you from going back and watch the other stuff whenever.

Universal Century is best, which includes MSG(The "OG" you refer to), Zeta, ZZ, Unicorn, and side series like War in the Pocket, Origins, 08th MS team(My personal favorite), and 0083.

Wing is the most mainstream in the west, lacks the sprawl of UC and is a little easier to digest.

The original 0079 and Zeta are basically the "required reading" of Gundam. Both have decent movie adaptations and most of the OVA series people consider "The Best Gundam" happen in their timeframe.

It is funny but I think CCA is actually watchable for someone who has no idea about what happened in the previous series and about Gundam in general
He won't be confused with things like what the fuck happened between it and Zeta, how the fuck Char became what he is now, etc.
It will just seem like a plain story about an insane space villain who wants to destroy all the earthnoids and a hero on a cool white robot who is going to stop him.

Ehhhh...it gets you from point A to point B, but I can't say it's exactly a good alternative.

Plus, when you get down to it, those compilations were more made as a thing for the people who were already familiar with the series than as a means for newcomers to get into them.
Hence the marketing emphasizing new scenes, playing up the core characters just as known people without bothering to introduce them, and hyping up 'NEW ENDING.'

Granted, the 'for the fans' compilation is far from a new or unique thing by any means, but it does make it weird when people suggest a movie that was designed in large part for an audience that already knew the story.
