That's a really big stretch, I'd say. I mean, I guess you could (pretty weakly) compare Rei to the superego since she seems to have no concept of doing things for the sake of enjoyment, but the other two don't really fit at all. It seems like the only similarity is that there were three of them. You could therefore just as validly say they represent the three original Star Wars movies. Or, with the show's fondness for Judeo-Christian imagery, the Holy Trinity.
