The problem is that FSS's story is just a series of events that happen. Each story is self-contained and there are quite a few recurring characters, but it doesn't really work as an overall story. Mainly because it's not a story, but a history book. And that's perfectly fine and actually unique, but it's not something that works for the anime format. There isn't really a sense of escalation or development. Much like historical events, things just happen.

Yes, I am aware that the timeline has more crazy "epic" shit, but seeing how we never get to it it should have been clear that big events were never the focus of FSS. FSS's stories are about showing moments of peace or human compassion in light of certain big events, but the characters and their actions are all very distant from the actual events. People asking for Junchoon vs. KOG for example have totally missed the fact that it's already been fully covered in the manga. Not satisfyingly but fits with the overall "feel" of FSS because of it.
