Xabungle comes to mind in some ways. I don't remember the name of the other one, but there's an 80s cowboy mecha anime which was released in the states under a different name.

GUNxSWORD has that feel during some episodes, especially it's first episode. It varies it up a lot, but it does revisit that western feeling pretty often.

Though none of the mecha designs really complement that other than Mexican GaoGaiGar here and (stretching it very thinly) Vulkein.

Ultraman Orb's got a low-key cowboy thing going on.

There's been a fair amount of the hero walking off into the sunset while playing a harmonica. Doesn't sound like much, but he's really reminding me of Harmonica from Once Upon a Time In the West.
