I thought I remeber reading somewhere that del Toro wanted to have some pretty crazy mecha shit going on in the sequel. Do we know if that's still the case, or is it gonna be more toned down?

I'm trying to remain cautiously optimistic. Pacific Rim is not without faults, but it was still enjoyable and a decent mecha movie.

Earlier hashes of the script elaborated on how the drift works, toxic bloom and the gipsy pilots learning to work together (with a dance like you want to win scene believe it or not) but for unknown reasons these things got tossed into the fuckit bucket.

Originally mako(?) was already a jaeger pilot but her machine got destroyed and she's all bandaged up like you-know-who when she first meets the main guy.

Just because a movie is a dumb popcorn movie doesn't mean it can get away with shitty writing. Just look at the first Independence Day, it was dumb but had great effects, fun likable characters, and good pacing when compared to the second one which felt a bit rushed by comparison with a couple plot holes. Yeah, MGM, who has owned the rights to The Hobbit since the 60s, was giving Del Toro and Jackson the runaround because of their own financial failings. So they'd tell them they could start production, then a few months later, telling them they had to stop. Then six months later they could start again. Then a few more months later they had to stop.
After two years of stop-and-go, Del Toro just had to leave the project to actually make something that would come out. And we got Pacific Rim.
Jackson stepped up to make the Hobbit trilogy, but it's so lifeless and dull compared to LOTR, that it's obvious that he didn't want to be in the director's chair for that.
Really sad to think of what could have been if Del Toro had stuck around.
The Mirkwood spiders would have actually been fucking scary rather than a random interlude before Jackson's waifu, Orlando Bloom, shows up.

Hannibal Chau, Herman and Newton, etc.

Hell, the relationship between Mako and Stacker was at least not the same regurgitated tropey shit that most bland action films would serve up.

The only dynamic in the movie that actually came off as overly played-out was the australian dude and Reileigh being toughguy rivals.

But I think it more than made up for that with the end of the movie. Father-son relationships in Hollywood movies rarely show a lot of real emotion, and rarely do they kill off the son of the pair for any purpose other than to set up a tragic backstory or something.

Basically, regardless of how much you engaged with the characters, I think it does the movie a disservice to lump it in with movies that actively don't give a shit about their writing.

An annoying problem that this film faces from both casual viewers and "critics" is the mentality of "what is x?" rather than "how is x done?" which results in either "LMAO THAT'S DUMB" or "That's dumb". Also lack of discussion of the film's aspects beyond "plot" and "characters" which aren't even unique to the visual medium. Just the use of visual elements as another aspect of storytelling seem to be eluded by these people who never goes beyond "Yeah, the fights are cool".

I find PR nice to look at. Lots of striking moments that are not just about hooking a kaiju in the gabber and even then, only in Hong Kong were the thematically "fun" battles. It's in those moments where I find a lot of the film's humanity, from the various snippets in the opening montage to Raleigh looking over the wall towards the sea to Herc's mourning at the end, and it sucks that most people disregard them. Pic related is my favourite as it pretty much spells out what this whole affair is about.
