The only reason VFs even exist in Macross is because they are made with a space metal that's stronger and lighter than anything we currently have and energy conversion armor that strengthens the frame for battle and transformation. VF's are fantasy machines. Something that can transform from a fighter jet to a mech while still being able to be combat capable and maintainable is pretty much impossible.
A large scale action model should be possible though.

We're very close. Pre-production prototypes were shown at CES this year. Just a bit of final finetuning and ergonomic adjustment left before the official launch.

The main problem would the amount of moving parts which would be hell to maintain and the fact that it will most probably tumble endlessly when it transforms in mid-air(that is, if it even transforms properly without jamming and quick enough to not crash before transforming successfully).

If we're not transforming the plane, a VF-0 is completely possible considering that its pretty much a F-14 with thrust-vectoring.

Would a transformable jet fighter even be a feasible weapon? Not necessarily one that turns into a humanoid robot, but one that can switch between jet fighter mode and maybe gunship mode

Then again, I guess it's not really that important a feature to have when you could alternately just use a jet fighter AND a gunship, separately
