AMBAC allows a MS to reorient itself without burning propellant. For that purpose, a lanky, flexible form is useful. There are more lanky forms in the animal kingdom than humans, but they're far from intuitive, like spiders. The human form is spread across 6ft, stretches to 8ft and compresses to 3ft, and nearly matches that in every direction. Quadrupeds don't do that.

Those same limbs manage to not be dead weight if combat switches to inside a colony. The MS uses the same equipment to move around the colony. Walking may not be the best way to move around, but dead weight is expensive from an engineering perspective.

The scientists and other pilots were being held captive. Trowa and Heero couldn't just steal the suits without the others being killed. Even if they did steal the two suits and for some reason OZ decided not to execute the other pilots and the scientists why the fuck wouldn't OZ have the scientists make them new ones? The scientists were also secretly remaking Deathscythe and Shenlong. Trowa acting like a retard would get them found out and OZ would have two new Gundams
Trowa never revealed he was a Gundam pilot to OZ. He got fucked up by Wing Zero and was assumed dead.
