Coming from South America, I'd first say that it's a quena (traditional Andean flute),but it's more likely that's some sort of Japanese flute. I've ruled out the shakuhachi and hichiriki.

Then again, pretty much every Gundam has a consistently very solid score. A lot of the great UC stuff has already been posted (the main theme of CCA still gives me chills, and Zeta likewise is one the main osts that really gives shape to the universal century, Turn A and Unicorn are, well, Turn A and Unicorn). I've always been somewhat partial to the OST for 00's movie.
