Gundam early universal century seasons are important.
Original Macross
That's about as basic as you get.
Some would add VOTOMS and Mazinger in there.
Generally find something you like and check out similar stuff, pic related gives you some options for a beginner.
For older shows I'd add:
If you like Eva, check out Ideon
If you like Gurren Lagann check out Gunbuster (it's like the grandma of the Eva and TTGL)
Etc.

Personally i'd recommend Patlabor and Big O in addition.
If you want to check out Gundam but you hesitate because of the length, check out 0080 war in the pocket, it's a side story that pretty much shows you what Gundam is mostly about.

That list is pretty old now to be frank. There was another neat list of near every mecha anime ever that exists and is missing only a few, but I don't have it on hand.

Some advice for OP: Lurk more. Perhaps you'e heard it a million times, but the thing is there are a million threads like this. Check webM threads, whatever seems cool, and desustorage for similar threads to find new material rather than asking like a rube.

I hadn't and still haven't. I don't think I've seen a single mecha anime released between 1990 and 2010.
