Partly because it has anti-beam coating, partly because it was the 100th suit developed by Anaheim Electronics and they wanted it to look pretty. But the real reason it's gold is to serve as a giant middle finger to the Titans.

See, when the Titans were formed they tried to force Anaheim Electronics to stop making mobile suits for everyone other than the Titans, particularly Neo-Zeon forces and rebel groups like the AEUG. Anaheim, being professional assholes, decided to keep making suits for every side that would give them huge piles of money, assumedly so they could afford to continue binging space cocaine off of moon strippers, and made the paint scheme of their newest unit as garish as possible, just to rub the fact they were still making enemy mobile suits in the Titans' collectively fascist noses.
