I think Gadem is one of the only characters to do a lot of shoulder rams, and tragically, he was using a Zaku I with a smooth shoulder guard. Maybe if he had spikes he would've killed Amuro!

Technically they are meant to signify rank. Usually zaku pilots are lower class ensigns then gouf pilots who are usually officers and are more experienced. The spikes represent rank like captain, lieutenant, major.

I thought I read somewhere that the spikes are actually its radar. This was absent in the Zaku I. That's why Gadem does the shoulder check.
