Actually, as far as I know, the only sources that mention Zeon gassing multiple colonies is Tomino's novels (and we know how much those tie into the timeline) and the Entertainment Bible series, specifically 1 and 39, which is where I think the mention of "thermonuclear and BC weapons" is made. Neither source is a particularly reliable place to get information regarding the mainstream animated continuity, and EB itself tends to contradict other databooks, sometimes even previous EB entries. EB also makes a habit of putting out outlandish claims, like 39 mentioning 1100 Zeon mobile suits participating in Operation Odessa alone. Strangely enough, this is also where the claims about Zeon aces shooting down hundreds of Federation MS comes from, which would make them veritable rape machines compared to Amuro if true, considering most of the higher scores were supposedly made during the Federation's space campaign, which was a relatively short period of time compared to the overall time Amuro spent in the Gundam.

Other than that, the only colony we see get gassed is Island Iffish in 08th MS Team. Gihren's Greed goes the extra mile to show Cima being the pilot of the very Zaku that Shiro watched gas the colony, which I thought was a nice touch. Origin similarly says that only one colony is gassed. It makes sense, considering that gas is not a reliable way to ensure the destruction of your target, and thus is impractical if your aim is to stop the Federation forces from mobilizing through show of force.

Either way, Gundam lore and backstory is something that's often presented in a very liberal manner in various databooks, and quoting it like historical fact has never been a very good way to approach it. In the animated continuity, gassing colonies has always been something more closely associated with the Titans than Zeon. Even Zeta tends to associate Zeon's use of G3 with the colony drop rather than widespread use of the stuff.

The notion that Zeon used gas or biological weapons on lots of colonies has always seemed downright stupid to me. You need multiple mobile suits equipped with colony gassers to kill the whole colony, and it takes time to wipe out the population. It's an involved operation as opposed to a simple volley. There's no point in gassing a colony unless you specifically want to keep it intact (case in point; Iffish.)
