Meyrink's The Golem and the Dream Story by Schitzler come to mind.
Finnegan's Wake.
Jung also talks about dreams often but then again, you'd actually have to read Jung.

Okay so the real answer to this question is John Sallis' "Logic of Imagination" as well as "Dreaming, Waking, Being" by Evan Thompson. The former is about 100x more interesting than the latter but read both. The other answer to this question is "The Poetics of Reverie" by Gaston Bachelard
