If I were to read only three works by Dostoyevsky, what would they be and in which order should they be read?

Notes from Underground is a good introduction because it's short. Crime and Punishment is probably his most widely read among non-literary people (and most famous). Brothers Karamazov is widely regarded as his masterpiece. Read them in that order.
Read C&P this summer and absolutely loved it.

This. The Idiot and Demons are also essential. Once you read a little Dostoevsky, you're going to want to read more.
start with crime and punishment, read TBK last.
