>one retains information learnt from a physical book better than from an ereader
Does this mean we retain definitions from a physical dictionary better than from an online one?

Yes, because you have to stand up, open the books, look for it constantly respeaking it usualy, till you find it. The more of a hassle it is, the easier it will stick.

This. The more associations a memory has, the easier it sticks.

I don't think it's just this, although it certainly contributes.
It's probably got a lot to do with it having a physical form, this facilitates for the brain to archive it.
You have to turn to a certain page, which will make the book look and feel a certain way.
What you seek has a certain number, line, notes connected to it, which again, having a physical appearance isn't just a a static screen but has a character to it specific to where you found it, an order that is impossible to find on an ebook.
In other words the whole sensory experience is what really aids memory.
