Of Plato you must read Euthyphro, Apology, Crito, Phaedo, Meno, Symposium, Phaedrus, Republic and Timaeus.
Of Aristotle I'd read Organon, Physics and Metaphysics (Neoplatonists don't ignore him!)

Read Greg Shaw's Theurgy and the Soul to get your foot in the door. You can use the footnotes from that book to guide further reading in accordance with whatever interests you. For more context you might check out John Dillon's book on Middle Platonism.
Trying to do the pretentious /lit/ "only read primary sources" thing with neoplatonism will be extremely painful. Plotinus' prose is atrocious, and the entire neoplatonic tradition is operating at a high level of jargony abstraction. But once you get the basics down, it is quite rewarding.
