Hearn also wrote a lot of New Orleans folklore down, so all that voodoo and zombies stuff that came from Africa and mixed with French and English.

Angela Carter has a good selection of fairytales from all over called Book of Fairytales, but her other books are feminist rewrites in general so just get that one.

Joseph Jacobs does English fairytales Celtic, Indian, all sorts. Padraic Colum also translated a lot of Irish fairy tales and got a commission to do English versions of Hawaiian stories. RL Stevenson spend his last years in the South Seas and there's a good book of the tales he collected there that is sorely underread

Is a pretty good Chinese folklore collection. Mix of fables and ghosty stories.

In the 1930s the folklore commission got nearly every child around 10 years old to talk to old people and write down local legends, ancient cures and curses, and oral history. They now have the collection uploaded. Some are transcripted and translated, and some aren't, so if you want to help you can. [Don't try to help if you can't because Google translate will not work for Irish sections and they have a different alphabet]

Hearn's books on Lousiana folklore sounds great, will give it a look see. Joseph Jacobs and Padraic Colum sounds right up my alley as well.
