Language and Politics, the edition from early 2000s. It's roughly 35 years of interviews with Chomsky, detailing his linguistics and general thoughts on the social sciences, but even moreso his criticism of US (and Israeli) foreign policy. It's a little thin post-1995, but Chomsky's criticism was at its best and most relevant during the Cold War and in the 5-10 years immediately following it. It's similar to >>9363702, but more thorough.
Many of his books are about specific issues. For instance, Deterring Democracy was published in 1991 and is good if you want to read about US policy in the 1980s towards Central America or the First Iraq War.
