Either Blood Meridian or Suttree.
Suttree is definitely his funniest, though it does have some beautiful writing as well. I liked all the violence in Blood Meridian and all the archaic grandiloquent language but I can understand how it would annoy others.

Blood Meridian by virtue of having Harold Bloom tell the plebs (us) that it is Cormac's best.

The Road is better than Blood Meridian, but for some reason I liked BM more.

People who make fun of the language haven't really taken the time to appreciate the reason he uses it. He builds stories through the third person objective so you feel like you are observing the evolution of a story. The structure of the prose just washes over you as well. It's not for everyone but I liked it.
