It's the same reason a cat chases a laser pointer. Colors in our usual mundane life (prior to modern tech at any rate) are rarely as pronounced and vivid as the spectral light from a prism or the deep bright red of a laser, animals it seem tend to mistake them for something more "alive" than the usual spectra of color / experiences would be my wager but then again it could just be a dumb doggo biting a light on a wall
