I think John Barth is someone you'd be very interested in.
Two quick recommendations by Barth:
>Night-Sea Journey
This one is a short story (~8 pages if I recall correctly), about a spermatozoan en route to an ovum. It has an existential crisis on the way, and lots of fun things are touched upon. Definitely read this, it is readily found/available online
>Giles Goat-Boy
This one was Barth's response to the review he often received for his previous book (The Sot-Weed Factor) as a satire of the hero's journey. At the time of writing TSWF Barth had never heard of the monomyth, and wrote GGB after learning about it, as a satire, or critique. It's very funny, but it is long so I wouldn't recommend it unless you like Barth.
After you've read these two his book 'Chimera' might be very interesting. He supplants ancient heroes with modern anxieties (i..e the opposite of what Joyce does with Ulysses), for example Perseus having a midlife crises, etc.

Waiting for Godot manages to completely avoid using it.

Dunno man, if it's called the hero's journey, well, maybe all the stories with heros?
