What are some good books on color theory? I mean from a philosophic perspective, not a scientific one.

Goethe's "Law of Simultaneous Color Contrast" and "Theory of Colors" are the first real Color Theory text.
Jospeh Alber's "Interaction of Color" is probably the most comonly used text in Art Schools, its most images and very much focussed on practical uses of color. But I wouldn't call it scientific, just "applied".
Johannes Itten's "Elements of Color" is a similar early modernist text.
David Batchelor's "Chromophobia" is about why modern society has embraced whites, greys and browns over highly saturated color.
