What philosopher deals with meaning?
Linguistics, because the entire issue of "meaning" is resolved when you define the word.

I'm OP and I wrote this. I know it's shit, I've been drinking. I have several ideas in my head going a mile a minute and It's terribly difficult to bring into existence these thoughts.

I find I express my thoughts more eloquently when I'm in correspondence with someone irl (typically via e-mail). There's a reputational cost to sounding like an idiot, and a social pressure to reduce your thoughts into the most clear and brief expression possible.
Essentially, read articles by academics on topics you're interested in, then e-mail them an original thesis veiled as a question about their own work. In my experience most will respond.
