Why should I believe that anything exists beyond what can be perceived? Why should I believe that anything beyond the physical exists?
You can't perceive my thoughts, does that mean my thoughts don't exist?
You can't perceive my physical interactions, does that mean my physical interactions don't exist?

ignores the crucial part of your question "What can be perceived," which is highly distinct between what you are perceiving or have perceived. Essentially you don't have to believe in anything that you cannot perceive, but that does not mean you should cling to your perceptions, as reality is not so clear cut. Rational thought plays a huge role in sensory awareness, between what is and what seems. This is part of the age old debate between rationalists and Empiricists that Kant btfo. Essentially neither the senses or our rational faculties are our absolute interpreters of the Universe, but rather both are important. One could not work without the other.
