"White Nights" for a short story that will give you a little insight what you're in for. "Crime and Punishment" for an in depth immersification (is that a word?) into Dostoyevsky's prose and Christian existentialism his books are permeated by. "Demons" for critique of nihilism and elements of political philosophy. "House of the Dead" is a top tier novel, but admittedly I can't really remember why I loved that book so much or rather what was the key point of intellectual engagement for a reader in it. And obviously, a jewel in the crown - "Brothers Karamazov", my favorite book of all times, most stunning and amazing literary experience I had - definately should be read last. That book was probably a first and last book that literally brought me to tears and I am not a kind of a "mushy" person.

"Idiot" and "Gambler" are ones I haven't enjoyed too much so I can't really recommend them even though it's mainly because of the tad heavy or sluggish prose and former still has some very intellectually captivating moments.

Haven't read from Dostoyevsky only "Notes from the Underground" and "Poor Folk" so can't give you opinion on them, but the latter is considered very different from the rest of his works and not a part of Dostoyevsky's classics.

Yeah I finished Time Regained last month.

For now it should be pretty readable and good but it'll get kinda tiresome through books 2 and 3.
I personally liked 4 a lot because I'm gay but a lot of people say that one's even more tiresome.
5 was pretty artsy and good but I read it in only a couple days
And the conclusion was pretty satisfying.

If it starts to become unbearably slow I'd say drop it honestly, but if you're enjoying it by all means keep going.

I'm also a little apprehensive because I've kind of convinced myself that the book contains the meaning of life or something, or at least presents didactically (and not in a bad way) some grand philosophy of life and art - is this necessarily true? I think I've hyped it up too much in my own mind.

The funniest book that I've ever read was The Onion's Our Dumb Century. I want to say that I read each of Moby Dick and Brothers K once, for cred, but it's been so long that I can't do a favorite cred type thing. The older I get, the less interesting I find the prospect of reading fiction outside certain classic tropes to be. I have had an edition of Proust for literally about fifteen years and I've never gotten around to it. Even now there are other things which more immediately hold my interest.
