Start with oxford's "first philosophers," and use graham's "early greek philosophy" if you ever want to circle back to the pre socratics.
Jumping right into plato is fine, and that Cooper text is a great edition. Consider supplementing it with at least wiki articles, if not commentaries dialogue by dialogue (bloomsbury companion to plato and ae taylor's "plato the man and his work" both do this) or as an overview (section of Copleston's history of philosophy relevant to plato) or as more intense academic essays (cambridge companions to plato/republic, vlastos' "platonic studies").
Plato is very accessible, and don't sweat the small stuff at the beginning; you'll never learn Plato "completely," so just enjoy the ride, reference some modern commentaries sometimes, and try to talk on lit about what you've read and learned to make sure you're understanding what's going on.
